Local miller for over 20 years, Rosaria Pinho knows her land like the back of her hand.
Today she passes her passion for olive oil production onto her son Cyril. At the beginning of November, the olives are harvested at their peak aromatic maturity. To ensure the olive oil is of optimal quality, these olives are then pressed during the same day. An artisanal oil where all the olives have been cultivated by sustainable agriculture.
