Classified in the PDO area of Aix-en-Provence, these groves have been cultivated in a sustainable farming manner. The pits and skins of the olives are reused after the oil extraction and are spread across the fields acting as a fertilizer to the trees. The handpicked olives are pressed within 12 hours of the harvest.


Under her epxert hands, Christine ensnures the olives are able to release all their aromas and is this that makes such exceptional olive oils. This oil is a true delight for those who seek a more balanced oil.
