Ideal for Mesclun salads, grilled shrimp, grilled asparagus, steamed vegetables, grilled meats, as a glaze, and terrific on strawberries, vanilla gelato or both together.
Each year the vinegar is transferred into smaller barrels. Each barrel is used for specific purposes: acidification, maturation and aging. It is during this last phase that each barrel gives fragrances and flavorings, letting the magic operate. The more time passes, the more valuable and precious the balsamic vinegar becomes.
