During a long aging process in oak barrels, the rare and precious elixirs develop their fragrance. Each year the vinegar is transferred into smaller barrels. Each barrel is used for specific purposes: acidification, maturation and aging. It is during this last phase that each barrel gives fragrances and flavorings, letting the magic operate.
