A traditional recipe from Sicily, to vary from Genovese pesto! The Sicilian pistachios are carefully selected and then crushed according to a traditional method giving the recipe a granular texture, slightly crunchy and sweet in taste.
Enjoy on bruschetta, with pasta, in a cake, as a pizza base with mortadella, to garnish a pork tenderloin, white fish / tuna steak / scallops / shellfish or zucchini linguine.
