Prepared according to a regional recipe, the aubergines cut into small pieces are fried & then added to the mixture of tomato sauce, onion, celery, olives & capers. To give the caponata the typical taste of the Sicilian sweet & sour, a hint of vinegar & sugar are added at the last moment.
