Olio novello, also known as new-season olive oil, is eagerly awaited each year by olive oil lovers. Affiorato embodies this olio novello: the very first oil pressed of the year, the first olive juice from the new harvest, and the official signal of its launch at Oliviers&Co.

With Affiorato, we also begin our first annual journey to the largest island in the Mediterranean: Sicily, the iconic homeland of olio novello. A must-meet moment for connoisseurs and enthusiasts of new-season olive oil.

 

A new-season olive oil with incomparable freshness

Incredibly fresh and authentic, Affiorato captivates with its expressive character and intense nose, evoking a bouquet of freshly picked garden herbs. Unfiltered, it is the result of demanding craftsmanship and a very early harvest.

The finest olives, still beautifully green, are hand-harvested and pressed just a few hours after picking, in order to preserve all their vibrancy and aromatic richness.

Perfectly balanced, Affiorato 2026 reveals intense aromas of freshly cut grass, lifted by delicate notes of green almond, tomato, and Mediterranean aromatic herbs. Smooth, round, and generous, it delivers a lovely length on the palate, with no excessive bitterness or pungency, finishing on a delightfully fresh note.

 

An exceptional selection in Sicily

Oliviers&Co has selected the finest Sicilian estate: Massimiliano Geraci, a long-standing partner of the brand. This exceptional vintage is made entirely from the Nocellara del Belice variety, considered the queen of Sicilian olives.

To make it available as soon as possible, the countdown begins in Sicily in mid-October. Massimiliano Geraci has implemented an exceptional selection method: the most beautiful olive groves are carefully chosen, and only the healthiest, greenest Nocellara del Belice olives are hand-harvested and crushed immediately after picking. Here, the selection takes place before pressing, to obtain the very cream of the crop in olive oil.

Harvested and pressed in record time, Affiorato is then transported to France to be bottled in Haute-Provence, ensuring it reaches festive tables as quickly as possible.

 


Did you know?

The word Affiorato literally means “what has risen to the surface.” It takes its name from a very old Italian method: since olive oil is lighter than water, it would naturally float to the surface. The nectar obtained this way was renowned for its freshness, vegetal character, and delicate quality.

 

A new-season oil with preserved benefits

Consumed immediately after pressing, new-season olive oil reveals its full nutritional power. Because it is extracted very early in the season and enjoyed almost immediately, Affiorato naturally concentrates a maximum of antioxidants and polyphenols, valuable allies for everyday health.
