Soft Baked Pumpkin Cookies with heart healthy Olive Oil in place of butter. The perfect treat!
1/2 cup Oliviers&Co Everyday Olive Oil
2 1/4 cups all-purpose flour
1 cup Butternut puree
1/2 cup white sugar
1/4 cup packed light brown sugar
2 tsps baking powder
1 tsp baking soda
1 tsp vanilla extract
1 tsp ground cinnamon
1 tsp cinnamon sugar
1/2 tsp salt
1/4 tsp nutmeg
Preheat oven to 375 degrees. Line cookie sheet with parchment paper.
In a large mixing bowl, combine Olive Oil, sugar, pumpkin, vanilla, & egg. Mix in the flour, baking powder, baking soda, salt, cinnamon & nutmeg.
Mix ingredients with your hands until dough forms.
Scoop dough into spoonfuls & evenly place on cookie sheet.
Bake for 10-12 minutes & let them cool on the pan for about 30 minutes. Sprinkle cinnamon sugar on tops of cookies before serving.
