Ingredients

1 tbsp Holiday Vinegar Passion fruit & thyme
Holiday Olive Oil
Flower Salt from the Ebro Delta
Pepper and berry mix
  

At the market
300 g cod or hake fillet
125 g cream cheese (such as Saint Moret)
2 shallots
1/2 bunch of cilantro
2 tsp fresh ginger
1 passion fruit

Directions

Preheat the oven to 160 °C (320 °F).

Season the fish with salt and pepper, drizzle lightly with olive oil, then bake for 15 minutes. Let cool.

In a bowl, mix the chopped shallots, chopped cilantro, grated ginger, passion fruit vinegar, and cream cheese.

Add the flaked fish, the pulp of the passion fruit, and a drizzle of olive oil, then mash everything together with a fork.

Adjust the seasoning to taste.

Refrigerate and serve chilled on toasted bread.
