About This Recipe
A madeleine recipe revisited with lemon, for even greater softness and a slightly tangy taste.

3fl oz Lemon Olive Oil
1 jar Lemon Curd
1 pinch Flower Salt from the Ebro Delta
At the market
6oz sugar
1 tbsp lemon zest
3 eggs
11fl oz milk
6oz flour
0.2oz baking powder
2.65oz butter, melted
Directions
Preheat oven to 410°F.
Whisk the eggs and sugar in a bowl. Add flour, salt, baking powder, lemon zest, butter and lemon olive oil. Mix until smooth. Leave to rest in a cool place for 30 minutes.
Butter and fill madeleine molds to 2/3 of their height. Bake for 8 to 10 minutes, keeping an eye on the baking time.
Turn out the madeleines as soon as they come out of the oven and leave to cool on a wire rack.
Spread the lemon curd over the top of the madeleines and serve.
