Olio Novello - Affiorato is the first olive oil pressed each year, a pure and incredibly fresh olive juice cherished eagerly by connoisseurs. This unfiltered new olive oil is the result of expertise and an early harvest. Handpicked from still green olives, they are pressed within hours of harvesting. Perfectly balanced, the 2024 Affiorato reveals intense aromas of freshly cut grass complemented by hints of tomato leaf and fresh almond.

Smooth, rounded, and indulgent, without bitterness or excessive pungency, this early harvest olive oil unveils a beautiful mouthfeel with a finish of fresh green pepper. Consumed right after pressing, this new oil delivers all its benefits, packed with maximum antioxidants and polyphenols.

Olives :100% Nocellara del Belice

The Affiorato, which means "that which has risen to the surface", takes its name from an ancient manufacturing process used in Italy. As the oil is lighter than water, it "floats" to the surface, and the resulting nectar is fresh and delicate.

To produce this nectar for Oliviers&Co, long-standing partner Massimiliano Geraci implemented an exceptional selection method. Only the healthiest, greenest Nocellara del Belice olives are crushed immediately after harvesting. As a result of the summer drought, this year 8 kg of olives per liter were needed to produce this great vintage.

Harvested and pressed in record time, Affiorato is immediately shipped to France to be bottled in Provence, to arrive on festive tables as soon as possible.
