In the heart of Manosque, the Moulin de l’Olivette embodies the art of Provençal olive oil production: refined, expressive, and deeply rooted in the terroir. Founded in 1928, it is one of the oldest working olive mills in the region, where the olive is considered a precious fruit. Its olive groves, which stretch across Manosque and its surroundings, benefit from ancestral know-how passed down through generations. Olive growing is inseparable from the history, culture, and landscape of Provence.
The harvest is carried out with care when the Aglandau olive has reached its full aromatic maturity, often while still green, in order to preserve its natural freshness, intensity, and richness in polyphenols.
