About This Recipe
Crispy zucchini fritters, flavored with mint and feta, to dip in a za'atar Greek yogurt… the kind of recipe you make once and keep coming back to all summer long.
Ingredients

10 almonds with thyme
Mint Olive Oil
2 tsp. za'atar
At the market
2 large zucchini
180 g feta cheese
5 sprigs of dill
12 mint leaves
180 g flour
1 tsp baking powder
1 egg
Oil for frying
300 g Greek yogurt
Salt, pepper
Directions
Wash and grate the zucchini (using a coarse grater). Season lightly with salt and pepper, then let sit for 10 minutes to draw out the moisture. Squeeze by hand to remove excess water.
Cut the feta into pieces, finely chop the dill and mint, and add to the zucchini.
Stir in the olive oil and mint, flour, baking powder, egg, and ½ tsp. zaatar. Mix well; the batter should remain sticky.
Heat about 3 cm of frying oil in a skillet to 180°C. Scoop up a tablespoon of batter and, using another spoon, drop it into the hot oil. Fry in batches, turning until golden brown. Drain on paper towels.
To serve, mix the yogurt with 2 pinches of pepper. Serve in a bowl, sprinkled with zaatar and a drizzle of mint olive oil. The fritters can be prepared in advance and reheated for 10 minutes in the oven at 210°C.
