A gourmet delight where creamy burrata meets aromatic truffle, crisp arugula, sweet pear, and crunchy almonds for a perfect balance of flavors.

1 tbsp Pesto Genovese
Black Truffle Olive Oil
Extraverte Olive Oil
At the market
6 small burratas
1 pack slivered almonds
1 pear
1/2 lemon
0,10lb arugula
Crushed Pepper
Directions
Brown the almonds dry in a non-stick frying pan.
Put the arugula (leave some for decoration) in a blender with 2 tbsp of olive oil, 1 tbsp of truffle pesto and 3 tbsp of water and mix.
Wash, dry and cut the pear into thin slices. Lemonize them lightly so that don't blacken.
Place the burratas on six small plates, opening them slightly in the center, spread a few slices of pear, truffle & arugula pesto, sprinkle with toasted almonds and arrange the remaining arugula.
Drizzle with a few drops of truffle oil, sprinkle with crushed pepper and serve immediately.
