At the market
4-5 mozzarellas
3 lemons
0.5 oz caster sugar

Directions

Using a peeler, peel the lemon zests, taking care to remove the white parts. Soak in cold water for 2 hours. Drain and slice finely into matchsticks.

Bring a large pot ot cold water to the boil, and plunge the zests into it. Drain and repeat the process a second time.

Pour the sugar and juice of 2 lemons into a saucepan and bring to the boil. Add the zests and cook for 10 to 15 minutes. Remove from heat and allow to cool.

Drain the mozzarellas and place on a plate. Place the preserved lemons on each mozzarella.

Drizzle with lemon oil and sprinkle with salt & herbs. Serve with toasted bread.
