About This Recipe

A summery recipe for a light, gourmet starter. Lemon and cherry combine perfectly to give a sweet and savory twist to these skewers.

Ingredients

At Oliviers&Co
8 tbsp Lemon Olive Specialty
Cherry Specialty Vinegar
Semi-dried Cherry Tomatoes

At the market
8 cured ham thin slices
8 mozzarella di buffala balls
4 sandwich bread slices
1 garlic clove
2 tbsp pine nuts

Directions

Toast the slices of bread. Rub with garlic and drizzle with lemon oil. Cut into cubes.

Dry-roast the pine nuts in a frying pan.

On a wooden skewer, thread a cube of bread, a ball of mozzarella, then another cube of bread, a ball of  mozzarella and finaly a slice of ham rolled on itself. Repeat for each skewer until all ingredients are used up.

Place the skewers on a platter and drizzle with lemon oil and cherry vinegar.

Sprinkle with pine nuts and serve with dried tomatoes.
