Try these delightful and creamy mashed potatoes. Great to serve to a large group or at a party.

1/3 cup Greek Olive Oil
1 tbsp Black Truffle Oil
At the market
2lbs potatoes, cut into 2 inches chunks
3.4fl oz cream
Directions
Place potatoes in a pot of cold water. Add salt and bring to a boil. Reduce heat and cook until potatoes are tender, about 12-15 minutes.
Remove from heat and drain potatoes, reserving 1 cup of cooking liquid.
In a bowl, place potatoes and start mashing with a ricer. When they form a purée but with still some chunks, add olive oil, black truffle oil and cream. Continue to mash until a smooth and creamy texture is obtained.
Before serving, add a drizzle of olive oil on top.
