A delicious and refreshing recipe with fresh cut strawberries and organic olive oil.

Ingredients

Organic Green Lemon Olive Oil

At the market
3 cups cream
1/2 cup sugar
4 sheets of gelatin
1,5 organic lime
3 cups strawberries

Directions

The day before
Soften 3 gelatin sheets in a bowl of cold water.

Heat cream with sugar, remove from heat as soon as it boils and add gelatin sheets previously wrung out between your hands, then mix. Leave to stand for 5 minutes.

Add the grated zest of a lime. Pour into fou glass containers (about 2/3 of the way through) and keep in a cool place until the next day.

The following day
Soften the remaining gelatin sheet for 5 minutes in a bowl of cold water.

Wash, remove the stems and mix 1 cup of strawberries with the juice of the remaining half of lime. Take 2 tbsp of the coulis and let it cool in a saucepan. Add the drained gelatin and stir over low heat quickly to dissolve the gelatin, add to the coulis, mix and spread ove the panacotta. Put back in the fridge for at least 1 hour.

Juste before serving, cut the remaining strawberries into small dices, like a tartare, and put them in a bowl. Add 2 tbsp of green lemon olive oil and mix together.

Pour over panacotta and enjoy!
