Treat yourself with these classic French snacks, using the lemon olive oil to add a special twist!

Ingredients

Lemon Olive Oil
Sweet Roasted Pistachio Spread
Lemon Curd

At the market
6 tbsp butter + 1.5 tbsp for the molds
3 eggs whites
1/2 cup almond powder
5 tbsp icing sugar
3 tbsp flour
1/2 cup slivered almonds

Directions

Melt the butter in a saucepan until it turns in a hazelnut color. Let cool.

In a bowl, mix the sugar, flour and almond powder. Add the eggs whites and the melted butter. Add half of the pistachio spread and 2 tbsp of lemon olive oil. Mix well until smooth. Pour into the buttered financiers molds and set aside to chill for 1 hour. 

Preheat the oven to 375°F.

Place the molds in the oven.

Bake for about 15 minutes. Let cool before removing from the molds.

Toast the sliced almonds in a dry, hot skillet.

Spread lemon curd or pistachio paste on each financier and sprinkle with the toasted almonds.
