Ingredients

A Capela dos Olivais Olive Oil
Lemon Olive Oil
4 tbsp Fruit Spread

At the market
1 cup whole milk
4 egg yolks
1/2 cup sugar
1 1/3 cups fresh cream
1 vanilla pod

Directions

Boil the milk with the vanilla pod. Set aside.

In a bowl, whisk together egg yolks and sugar.

Remove the vanilla pod from the milk and carefully pour the hot milk into the egg yolks. Mix well. Pour into a saucepan and heat over ver low heat until the mixture thickens, stirring constantly. Take care not to boil the mixture.

Once the mixture has thickened, add 2 tbsp of olive oil and leave to cool.

Whip the fresh cream and fold into the cooled mixture. Pour into ice cream molds and freeze for 3 hours. To prevent ice crystals from forming, stir the mixture in the molds every half-hour.

Remove ice cream from molds and place on dessert plates. Add a tsp of fruit spread on each ice cream.

Finish with a drizzle of lemon olive oil and serve.
