The Piment d'Espelette, AOC certified since 2000, is a deep red colored, flavor-packed pepper that grows in a small area in the Basque region of Southwest France.
Hand-harvested and often used as seasoning instead of traditionnal pepper (due to its smoky flavor and mild heat), the Espelette chili's slight spiciness combined with fruity and toasted aromas imparts a distinct flavor to culinary preparations.

The seasoning has become such a cherished commodity that it has been given a protected designation by the European Union, ensuring that only peppers grown in the Espelette region may be labelled as Piment d'Espelette. Oliviers & Co 's Piment d'Espelette has been produced for almost 10 years by Pierre Gassuan in the village of Ustaritz.
