A delicious recipe for a marinated salmon in pomegranate. An ideal dish to impress your guests.

4 tbsp Garlic Olive Oil
4 tbsp Pomegranate Vinegar
At the market
17.6 oz salmon filet
1 small raw beetroot
1 pomegranate
5.28 oz brown sugar
112 oz sour cream
A few pink berries
Directions
Grate the beetroot and mix with salt and brown sugar. Add half the pomegranate seeds and juice. Keep the other half in the fridge. Add the pomegranate vinegar.
Pour half the marinade into a shallow dish. Place the salmon on top and cover completely with the remaining marinade. Cover with a cling film and chill for 48 hours.
The same day, prepare the sauce. Whip the cream, add the juice of the other pomegranate half, the garlic olive oil and the pink berries.
Just before serving, rinse the salmon and dry it carefully. Cut it into thin strips and serve with the sauce.
