About This Recipe

A recipe for quiche without crust, spinach and smoked fish. Simple and quick for a lunch on the grass!

Ingredients

Everyday Olive Oil
Lautrec Garlic Specialty Vinegar
Walnut Oil
Salt from Camargue
Pepper

At the market
9oz fresh spinach + 5.5oz sprouts for final touch
2 shallots
1/2 garlic clove
9fl oz whole cream
2oz flour
1 egg
1 smoked trout fillet
1 pinch nutmeg

Directions

Preheat oven to 392°F.

Finely chop 1 shallot and garlic and cook over medium heat with 2 tbsp of olive oil.

Add spinach, mix and allow to combine, covered.

In a bowl, mix the egg, cream, nutmeg and flour. Add spinach and wrung out with your hands.

Crumble up the trout and mix. Add salt & pepper, recitfy if necessary.

Pour everything into a well-oiled dish and bake for 20 minutes. Allow to cool and unmould.

In a salad bowl, mix the garlic vinegar with 2 tbsp of walnut oil and add the remaining shallot.

Add spinach sprouts and mix. Serve with the quiche.
