About This Recipe
An original dessert recipe based on berries, lemon curd and an olive oil biscuit.

1 jar Lemon Curd
Italian Grand Cru
Pomegranate Specialty Vinegar
At the market
18oz strawberries
9oz raspberries
5.3oz sugar
3.5oz flour
3.5oz almonds
2oz almond powder
1/2 baking powder packet
1 egg
Directions
Flour the work surface.
Pour in all dough ingredients except whole almonds and mix together until you have a smooth dough. Add almonds, mix, cut the dough and shape it into rolls.
Preheat oven to 428°F.
Place them on a baking sheet covered with parchment paper, put them in the oven for 15-20 minutes. Take them out, lower the oven to 212°F, let them cool and cut them with a knife into slices of 1inch and put them back in the oven for 50 minutes.
Let them cool on a rack.
Divide the lemon curd among 4 glasses, add red fruits on top. Sprinkle with summer olive oil and pomegranate vinegar. Serve with crunchies.
