About This Recipe
An original and simple recipe that revisits the traditional foie gras, associated with Asian ravioli, for a festive and gourmet result!
Ingredients

1 tbsp Pink Grapefruit Specialty Vinegar
Italian Olive Oil
Salt from Camargue
At the market
16 Chinese ravioli sheets
0.5lb semi-cooked foie gras
34fl oz chicken stock
Pepper
Directions
Moisten the edges of a ravioli sheet. Place a piece of foie gras in half of the pastry, season with salt & pepper. Close the pasty to form a half moon. Repeat with the other sheets. Place the raviolis on a sheet of greaseproof paper in the refrigerator.
Just before serving, mix 2 tbsp of olive oil with 1 tbsp of vinegar. Season with pepper, pour the boiling stock into four bowl and divide four ravioli into each bowl.
Drizzle with the dressing.
