A fresh, colorful salad bursting with energy! Tender quinoa, crunchy radishes, sweet strawberries and melon, all enhanced by the boldness of our summer olive oil and the tangy sweetness of grapefruit vinegar. A recipe as beautiful as it is delicious, perfect for sunny lunches!

Ingredients

4 tbsp Summer Olive Oil
2 tbsp Grapefruit Sweet Vinegar
5 Sun-dried Cherry Tomatoes

From the market
150 g quinoa
200 g arugula
10 red radishes
1 red onion
10 strawberries
1 slice of melon
5 basil leaves

Directions

Rinse the quinoa under cold water, then cook it in boiling water for 15 minutes.

Add salt, drain. Wash the radishes and slice them into rounds. Peel and chop the onion and sun-dried tomatoes.

Cut the melon into thin slices and dice the strawberries.

Mix the summer olive oil, grapefruit and lemon vinegar, and chopped basil; season with salt.

Just before serving, combine all ingredients, drizzle with the dressing, add pepper, and enjoy chilled.
