Ingredients

At Oliviers&Co

5 tbsp. of pressed olive and fresh thyme
1 jar all' Arrabbiata tomato sauce

At the market 

2 cans albacore tuna 
1 shallot 
100 g herb cheese spread 
8 sheets of brick pastry 
1 egg yolk 
Fresh parsley, chopped 
Salt and pepper

Directions

Crumble the tuna into a bowl.

Add fresh herb cheese, 2 tbsp. all'Arrabbiata sauce, parsley, salt, pepper and 3 tbsp. olive oil & thyme.

Mix well.

Cut brick pastry sheets in half.

Place filling on top and fold into a samosa-like triangle. Before closing, coat each samosa with egg yolk to help it stick to the brick pastry.

Fry on both sides in the remaining olive & thyme oil until golden-brown.
