Turkey with Clementines & Roasted Root Vegetables

Ingredients

White Truffle Olive Oil
Gusto Intenso Balsamic Vinegar
Salt & Herbs Mix for Meat

At the market
1 free-range turkey
6 clementines
50.7fl oz chicken stock
1 garlic head
1 tbsp honey
3 carrots
3 parsnips
3 Jerusalem artichokes
Pepper

Directions

Preheat oven to 356°F.

Boil the stock with the juice and zest of one clementine and 3 whole clementines. Add the turkey and simmer for 20 minutes.

Remove the turkey and citrus fruits, cut in half and place in an ovenproof dish.

Stuff the turkey with the remaining 2 clementines. Drizzle generously with olive oil, salt & herbs and pepper. Cut the garlic head in half crosswise. Place the turkey in the oven for 2 hours, basting regularly.

Halfway through cooking, add the halved garlic, carrots, parsnips and Jerusalem artichokes, and turn halfway through cooking.

Before serving the turkey, drizzle the vegetables with white truffle olive oil and a few drops of balsamic vinegar.
