4fl oz Greek Reserved Harvest Olive Oil
3.5oz Genovese Pesto
1.75oz Rosso Pesto
15 Green Olive with Oregano
Pepper

7oz flour
1 packet baking powder
3 eggs
10 mozzarella balls
3.5oz grated Parmesan
3.4fl oz milk
Directions
Preheat oven to 356°F.
Mix the flour and baking powder in a bowl. In another bowl, beat the eggs, olive oil, Genovese pesto and milk. Mix to a lump-free texture.
Add the Parmesan, mozzarella, olives (reserve a few for decoration) and pepper.
Butter and flour a cake tin. Pour in half the mixture, spread with the Rosso pesto, then pour the remaining batter over the top.
Sprinkle with the remaining olives and bake for around 50 minutes.
Serve warm or cold as an aperitif.
