Raspberry Specialty Vinegar
Pack of Canistrelli Biscuits

1 cup ricotta cheese
1/2 cup sugar, divided into 2 servings
1 1/2 tsp vanilla extract
3/4 cup heavy cream
Dark chocolate chips
3 cups fresh strawberries, sliced
Directions
In a medium bowl, mix the ricotta and 1/4 cup sugar and vanilla.
In a small chilled bowl, beat heavy cream until soft peaks form.
With a spatula, gently fold the whipped cream into the ricotta mixture. Cover and refrigerate.
Toss sliced strawberries with the remaining 1/4 cup sugar.
When ready to serve, layer parfait or wine glass as follow: strawberries, cannoli cream, chocolate chips.
Repeat for as many layer as the dish allows. Drizzle raspberry vinegar on the last layer.
Take canistrelli biscuits and crumble them over parfaits. Take some and stick into the top of the parfait for scooping cream. Serve immediately.
