About This Recipe
The specialty vinegar - raspberry - added to the honey, is the perfect blend to brighten up this delicious and light dessert.

5 oranges
2 pink grapefruit
4 egg whites
7oz icing sugar
1 tsp vanilla extract
Directions
Remove the peel and pit from 4 oranges and grapefruits, cut them into quarters, put them in a dish.
Squeeze the remaining orange, add 1 tbsp honey, 1 tbsp specialty vinegar, mix gently, sprinkle with orange juice and set aside in the fridge.
Prepare the meringue: preheat oven to 410°F.
Whip the egg whites, as soon as frothy, add half the sugar, continue to whisk until firm, add the vanilla extract, whisk again until shiny "peaks" form.
Divide fruits into four cups with honey sauce, drizzle with specialty vinegar.
Place the meringue on the fruit and let it brown in the oven for 3-4 minutes.
Serve immediately.
