About This Recipe

These cookies are deliciously moist and sweet! The fig & melon fruit spread adds the perfect touch to these irresistible and good-looking sweet treats. Delicious with a hot cup of tea or coffee.

Ingredients

1 tbsp Everyday Olive Oil
Fig & Melon Fruit Spread

At the market
2 cups flour
1/2 cup semi-salted butter
4 tbsp cane sugar
4 tbsp icing sugar
1 egg
1 tsp baking powder
1/2 tsp vanilla powder

Directions

Preheat oven to 350°F.

In a large bowl, mix the butter with both sugars and vanilla into a creamy mixture.

Blend in the egg and whisk again. Add the flour and the baking powder, combine all ingredients & mix well to obtain a consistent dough. Add the olive oil.

Place the dough on the floured work surface and roll about 1/4 inch thick. Cut out cookies with a 4inch diameter heart shaped cookie cutter and place on a baking tray covered with parchment paper. Cut out a small hole with a 1inch diameter cookie cutter in the middle of cookies.

Bake them for 8-10 minutes. Cookies are cooked when edges start to brown. Set aside to cool on a rack.

Place 1 tbsp of fruit spread on half of cookies, cover with the other half, applying a little pressure to weld the edges. Set aside for 1 hour before serving.
