About This Recipe
Lime-marinated chicken skewers grilled with bell peppers and thyme olive oil, deglazed with a sweet and tangy premium balsamic vinegar.
Ingredients

3 tbsp Thyme Olive Oil
Premium Balsamic Vinegar of Modena
Salt & Herbs mix for Meat
At the market
4 free-range chicken breasts
3 organic limes
2 green bell peppers
2-3 small spring onions
1 tbsp honey
1/2 tsp curry powder
Directions
Cut chicken breasts and peppers into cubes.
In a bowl, combine the juice of 2 limes, 3 tbsp olive oil & thyme and 2 tbsp balsamic vinegar. Add salt & herbs and mix.
Add the chicken and peppers and toss to coat well. Cover with cling film and marinate for 3 hours in the fridge.
Thread chicken and peppers onto skewers. Reserve the marinade.
Fry the skewers on both sides for 10 minutes with the halved spring onions and the last lime cut into quarters.
Once caramelized, deglaze with the marinade.
Cook for a further 5 minutes.
Serve with a simple green salad.
