Ingredients

3 tbsp Thyme Olive Oil
Salt & Herbs mix for Meat
Black Pepper
At the market
4 free-range chicken breasts
3 organic limes
2 green bell peppers
2-3 small spring onions
1 tbsp honey
1/2 tsp curry powder
Directions
Cut the chicken breasts and peppers into squares.
Thread the chicken and pepper onto the skewers. Place them in a dish.
In a bowl, mix the juice of 2 limes, honey, olive oil and pepper. Add curry and 2 pinches of salt & herbs mix.
Pour the marinade onto the skewers, cover with cling film and marinate for 3 hours in the fridge.
Drain skewers, sear them for 10 minutes on both sides in a pan with onions cut in half and the last lime, cut into quarters. Once everything is caramelized, add marinade.
Cook for another 5 minutes and serve with a crunchy zucchini sliced salad or a green salad.
