About This Recipe
A recipe for sardines with a touch of tomato for a Mediterranean aperitif or starter.
Ingredients

Everyday Olive Oil
Lemon Olive Oil
Pink Grapefruit Specialty Vinegar
Salt & Herbs Mix for Fish
Tomato Powder
At the market
Dried tomatoes
10.5 oz sardine fillets
4 slices farmhouse bread
1 garlic clove
1/2 candied lemon
1/2 bunch basil
Directions
Arrange the sardines in a dish, drizzle with lemon olive oil and salt & herbs mix. Cover with cling film and chill for 2 hours.
Preheat oven to 410°F.
Place the sardines on a baking tray lined with parchment paper. Bake for 6 minutes.
Rub the bread slices with garlic clove and fry until golden on both sides in 2 tbsp of olive oil.
Cut the dried tomatoes into strips and the lemon into small pieces. Chop the basil. Arrange the tomatoes and sardines on the bread slices. Sprinkle with small pieces of candied lemon and basil.
Drizzle with grapefruit vinegar and olive oil and finish with a sprinkling of tomato powder.
