Lemon Olive Oil
Grapefruit Specialty Vinegar

At the market
2.5 cups quinoa
17oz sashimi salmon
Lemon juice
2 grapefruits
2 avocados
1 lettuce
Soy sauce
3oz hazelnuts, crushed
Directions
Cut salmon into small cubes and put them in a salad bowl with 2 tbsp of grapefruit vinegar, lemon juice, 4 tbsp of lemon olive oil, salt and 3 tbsp of soy sauce.
Mix and let marinate for 30 minutes in the fridge, covered with plastic wrap.
Peel grapefruits, gently removing quarters and taking care to remove the white membranes.
Cut the lettuce into strips. Peel and slice avocados.
Put the quinoa into 4 bowls.
Arrange avocados, grapefruit, lettuce and salmon.
Divide the marinade among the four bowl.
Sprinkle with hazelnuts.
