A Mediterranean aperitif recipe.
Ingredients

Basil Olive Oil
Thyme Wine Vinegar
1 jar Eggplant Caviar
Salt & Herbs Mix for Pasta and Salads
Pepper
At the market
4 dried tomatoes
4 slices farmhouse bread, lightly toasted
5oz ricotta cheese
A few basil leaves
Directions
Spread eggplant caviar on bread slices.
Cut slices of ricotta and arrange on the bread. Drizzle with basil olive oil.
Slice the tomatoes and arrange on top.
Drizzle with thyme vinegar. Season with salt & herbs mix and pepper.
Sprinkle with a few basil leaves and serve.
