A recipe for roasted peaches, perfect for a delicious dessert or fruity snack.

Ingredients

At Oliviers&Co
1 tbsp Everyday Olive Oil
2 tbsp Pressed Olive & Fresh Thyme
Pepper

At the market
4 peaches
2 rosemary sprigs
2.5oz sugar
5 tbsp water
9oz mascarpone

Directions

Mix the mascarpone with 1 tbsp of olive oil and 1 tbsp of olive oil & fresh thyme. Season with pepper and chill.

Wash the peaches, cut in half and remove the stones.

In a frying pan, add the water and sugar. Cook over medium heat until the sugar has completely dissolved and the caramel is golden-brown.

Remove from the heat and add the remaining olive oil & fresh thyme. Stir and return to low heat. Add the peaches and rosemary. Continue cooking for 5 minutes, until the caramel is shiny and smooth.

Arrange peaches on plates, cover with caramel and add a spoonful of mascarpone. Finish with a drizzle of rosemary olive oil and a few sprigs of rosemary.
