About This Recipe

So simple and summery, no cooking is required! You can't go wrong with this combination or ripe tomatoes, basil and mozzarella. The tastiness of this recipe is proportional to the freshness of the ingredients, save your best tomatoes for this summer treat!

Ingredients

At Oliviers&Co
4 tbsp Basil Olive Oil
2 tbsp Premium Balsamic Vinegar from Modena
Salt from Camargue
Pepper

At the market
1 baguette
1lb mozzarella, 1/4 inch thick sliced
2 tomatoes, thinly sliced
1/2 red onion, thinly sliced
16oz spring mix lettuce

Directions

Split the baguette lengthwise. Drizzle each side with basil olive oil. Layer the tomatoes across half of the baguette. Sprinkle with salt & pepper.

Add a layer of onion and evenly drizzle with remaining basil olive oil and balsamic vinegar.

Add the mozzarella and spring mix. Put the top of the baguette and wrap it tightly in a plastic wrap.

Refrigerate for 2-4 hours and cut into thirds or quarters before serving.
