A light and fruity salad recipe, full of vitamins for a top winter performance!

Ingredients

4 tbsp Pressed Olive & Fresh Basil
4 tbsp Pressed Olive & Fresh Bergamot
1 tbsp Gusto Intenso Balsamic Vinegar
1 tbsp Raspberry Specialty Vinegar
1 tbsp Black Olive & Fig Tapenade

At the market
6 oranges
1 red onion
2 red endives
1 pomegranate

Directions

Using a mandolin, finely slice the red onion. Open the pomegranate and squeeze out the seeds and juice. Peel the oranges and cut into slices.

Arrange the endive leaves on six plates and place the oranges on top. Add the onions and pomegranate seeds.

In a bowl, combine the pomegranate juice, olivade, raspberry vinegar, balsamic vinegar, basil olive oil and bergamot olive oil.

Drizzle each plate with the dressing and serve chilled.
