A Capela dos Olivais Olive Oil
2 tbsp Basil Olivade
Flower Salt from the Ebro Delta

1/3 cup cream
2 shallots
2 zucchinis
2 eggs
1/3 cup milk
Directions
Preheat oven to 350°F.
Peel and thinly slice shallots and zucchinis. Sauté in olive oil until lightly browned. Add a sprinkle of salt and continue cooking until zucchinis are tender.
Gently stir in the basil olivade.
In a separate mixing bowl, beat the eggs and gradually add the milk and cream. Stir in the zucchinis and pour entire mixture into a gratin dish. Bake for about 25 minutes or until bublling.
Serve warm with a drizzle of olive oil.
