In Puglia, it was traditional to degrease the presses after the harvest by pressing fresh lemons. The resulting highly aromatic oil was intended for family consumption. Today, Oliviers & Co perpetuates this expertise by simultaneously pressing high-quality olives and limes. This combined pressing of olives and limes produces a beautiful emerald green color and intense, incredibly fresh aromas of lime zest. This delicious and aromatic oil is ideal for enhancing seafood, especially raw fish!
