Wild Pepper Balsamic Vinegar
Holiday Olive Oil
Salt from Camargue

18 green fine fattened oysters #3
2 firm kiwis
1 avocado
1 small shallot
1 organic lime
Directions
Peel the avocado and kiwis and cut them into small cubes. Finely chop the shallot, mix in a bowl with the zest and juice of the lime, 1 tbsp of olive oil, salt & pepper.
Open oysters and discard the first water. Spread a spoonful of the preparation on each oyster and sprinkle with a few drops of balsamic condiment.
Serve immediately with a sparkling wine.
