About This Recipe
A soft and delicious cake, perfect for tea-time or dessert.
Ingredients

6fl oz Spanish Olive Oil
2 tbsp Pomegranate Specialty Vinegar
At the market
3 eggs
5.5oz cane sugar
5.3oz flour
1 packet vanilla sugar
1 packet baking powder
1.7oz almond powder
1 handful slivered almonds
9oz strawberries
Directions
Preheat oven to 356°F.
Hull strawberries and marinate in pomegranate vinegar for 30 minutes.
Whisk the eggs with the two sugars until the mixture whitens. Pour in the olive oil, whisk again, then add the flour, baking powder and almond powder.
Oil a cake tin and pour in 1/3 of the mixture. Add half the strawberries, cover with another third of the batter, then add the rest of the strawberries and cover with the remaining batter. Sprinkle with slivered almonds.
Place in the oven for around 35 minutes and enjoy while still warm.
