6.75fl oz Everyday Olive Oil
1 pinch Flower Salt from the Ebro Delta
1 pinch Pepper
At the market
1 egg yolk at room temperature
1 tsp mustard
Directions
Mix egg yolk, mustard, salt & pepper.
Beat with an electric whisk in gentle, circular motions, pouring in the olive oil in very, very fine streams to thicken the mixture.
Add more olive oil until you obtain a non-liquid, slightly set, light-yellow texture.
Adjust seasoning if necessary.
