About This Recipe
An aromatic, crystalline winter garden where the flavors of chervil and bay leaf entwine with tender vegetables, carried by the herbaceous elegance of a drizzle of thyme oil and the liveliness of a touch of lemon.
Ingredients

Pressed olive & fresh thyme
Pressed olive & fresh lemon
Fleur de sel
At the market
1 bunch of kale
3 carrots
2 onions
4 stalks of celery
Bay leaves
Chervil
Directions
Rinse the cabbage and celery, peel the carrots and onion.
Chop the onion and dice or chop the vegetables.
Bring 1.2 liters of water to a boil. Season with salt and pepper, add bay leaves. Add the onion and vegetables.
Cover and simmer for 20 minutes over low heat. Rinse and chop the chervil.
Just before serving, remove the bay leaf, add the chervil, a drizzle of olive oil & thyme, and olive oil & lemon juice.
