Tagliatelle allUovo is an Italian pasta made with durum wheat and no less than 20% fresh eggs. These eggs ensure that the typical elongated shape of the pasta is better preserved during cooking, and also give the tagliatelle more flavor. The dough is produced by hand, partly by hand. In this case, bronze molds and longer drying times at lower temperatures are used. This explains why Tagliatelle allUovo has a coarse structure, allowing the sauce to adhere better to the dough. No two tagliatelles are ever the same: the edge may be a little scratched, or it may be smooth.
Due to its appearance and structure, Tagliatelle allUovo is ideal for creamy, liquid sauces, such as carbonara or a cream sauce with Porcini. Enjoy your meal!
