This matured olives oil from Provence, produced by expert miller, François Xavier Arnihac, is reminiscent of traditional Provencal olive oils, appreciated for their very ripe black olive taste, just like the ones our grandparents knew.
Matured olives oil is made from fresh green olives picked early in the season. In accordance with rigorous regulations, the miller initiates fermentation of the olives in vats, in a closed, heated room.
His expertise lies in the daily temperature control of the olives, which ferment without oxygen, day after day. The miller then crushes the olives, and the resulting olive oil is filtered to remove all impurities and give it the best possible stability, so that it benefits as long as possible from the best aromas that give in its charm: tapenade, cocoa, undergrowth and even vanilla.
This olive oil, with its assertive character is perfect for cooking with potatoes, goat's cheese, pizza or oriental cuisine.
