OLIVIERS & CO PRODUCER
Sabino Leone
Sabino Leone's century-old orchard near Canosa di Puglia, in the most olive-growing region of Puglia in southern Italy, produces an olive oil that wins prizes in numerous international olive-growing competitions every year. His high standards lead him to check the quality of his oil himself from the moment it arrives at his mill until it is bottled.
A true enthusiast of the profession and of agriculture, Sabino is now passing on his know-how and the family business to his children, Nino and Mina.
Owner of more than 300 hectares, our renowned producer cultivates typical Apulian olive varieties, including the "Coratina", which gives an oil with a lot of character! Many of the trees in his olive grove are more than 200 years old, a testament to the excellent care they receive.
Not a day goes by without Sabino walking through his olive groves to observe, care for and monitor their health. Knowing how to recognize a fruit ready to be harvested and pressed is key to producing high quality oil. He then oversees each stage of the crushing process at the mill (duration, temperature, blending, conservation, etc.).
Sabino's indulgence?
"I love bread with tomato and olive oil, it's the best meal and the easiest thing to prepare! When I went to school, I had oil all over my hands, the schoolmaster would get angry when I stained my notebook!"
