AROMAS TO APPRECIATE IN AN OLIVE OIL

Each olive oil has its own personality linked to several factors: terroir, know-how, varieties and maturity of the olives... Some will like it sweet, others piquant, round, creamy or fiery. There are two taste profiles:

- Vegetal: More or less intense, characterized by lively, fresh, vegetal notes such as cut grass, raw artichoke or tomato leaf.


- Floral: More or less delicate, characterized by velvety and milky notes such as fresh almond, butter, dried or cooked fruits.

 

HOW TO TASTE... THE TASTE ?

Lay out 5 cups and the 5 oils and begin your tasting.


✓ Pour a small amount into a tasting glass, use a clean glass for each new oil.


✓ Look at the color, yellow or green, bright or dull, swirl the oil to release its aroma.


✓ Take a deep breath from the top of the glass. What notes do you smell? Raw artichoke, tomato leaf, fresh almond, cooked apple...


✓ Take a small amount of oil into your mouth and hold it in the hollow of your tongue, then suck in some air. The air helps spread the oil in your mouth, giving you the opportunity to feel every nuance of flavor.


✓ Swallow the oil and note whether or not it leaves a pungent sensation in your throat

 

THE DIFFERENT INTENSITIES OF THE OIL

Mild: these olive oils are creamy, soft and gentle, they go perfectly with light or delicate dishes, especially fine fish or desserts.

Medium: these olive oils have a very balanced aromatic intensity, neither too powerful nor too neutral. They are very easy to cook with and ideal for everyday dishes.

Fiery: obtained from olives picked green, fiery olive oils reveal spectacular flavors, peppery sensations and small tingles in the mouth. They go well with dishes with a strong taste such as red meat, stewed dishes and cooked or raw tomatoes.

 

THE 5 QUESTIONS FOR YOUR PALATE

✓ What are the aromas that come through in the mouth?


✓ When the oil is on the front of your tongue, are the flavor and aroma notes fiery, medium, or sweet?


✓ When the oil moves to the back of your tongue, do you feel a bitterness? 


✓ Does the bitterness predominate or does it balance with the intensity of the flavor and aromas?


✓ When you swallow the oil, did it gently coat your tongue and then your throat? Or did it sting you, making you cough? If so, we're talking about the oil's ardency, a sign of high quality.
