Using and choosing truffle oil

 

Choosing the right truffle oil is not always easy. There are different varieties of truffle, and therefore different oils, but also different qualities and manufacturing processes.

The aim of this article is to explain how truffle oil is made, which process we have chosen, hot to better understand the notion of aroma and the difference between white and black truffle oil.

Truffle oil can be used in a wide range of recipes, so it's important to select it carefully to enhance your dishes.

 

Which truffle oil to choose?

Truffle oil is generally an olive oil to which truffle aroma and sometimes truffle slices have been added.

The choice of olive oil as a base in mainly due to the fact that the taste of the olive, sufficiently spicy, is gustatively the most adapted to the one of the truffle: they balance and sublimate harmoniously each other.

Not all truffle oils are created equal. That's why it's a good idea to read the label and check following points.

 

The container

It is often made of glass, to show the oil through. It should be protected by opaque packaging or kept away from light. The product may be dereriorate if exposed to light or heat.

 

The olive oil base

This is the main component of truffle oil. It can be of varying quality and freshness, so choose extra virgin olive oil.

 

The presence of aroma

Without aroma, the oil won't have the truffle taste. In fact, adding slices of fresh truffle adds virtually no flavor to the oil. This fatty substance does not absorb the powerful scent of truffles.
The mention of aroma is therefore unavoidable, and not a sign of a lower-quality product. It's the quality of the aroma that makes the difference, and only your palate will tell you.

 

Adding truffle slices

This won't change the taste or quality of the oil, but it does allow the word "truffle" to be mentioned in the product's legal name, and gives the impression that the oil is of better quality, or even more natural.

How to use the truffle oil?

What to do with it

Truffle oil can be used to enhance dishes, either as a seasoning or the end of cooking.
It goes particularly well with potatoes, risotto, pasta or fish carpaccio.
It can be added at the end of cooking, oas as a finishing touch to a hot or cold dish. Avoid cooking it, as it will lose its aromas.

 

How to store it?

To find out how to store your oil, refer to the instructions on the back of the bottle and its best-before date.
Generally speaking, as with olive oil, you must be careful to not leave your oil exposed to light or heat, and to reseal its container between uses, so that it doesn't lose its taste qualities.

To garantee you the best possible experience, our truffle oils are sold in a carboard bow that protects them from light and have a use-by date of 12 months. Beyond that date, they will still be edible, but will lose their freshness and intensity.

 

What's the difference between black and white truffle oil?

Black truffle oil

Its intense taste, with note of undergrowth and even garlic, makes it a perfect match for meats such as veal and stews, as well as dressings, eggs and beef.
It will appeal to anyone seeking a pronounced truffle flavor.

White truffle oil

Rarer, more precious and subtle in taste, it goes very well with white meats, but also with fish, risotto or seafood.
Its taste is more delicate, so use it on fine, cold dishes. Heat or strong-flavored ingredients will mask its aromas.
It's best suited to gourmet aesthetes: connoisseurs will be able to perceive its nuances and pair it with dishes where it balances with other flavors, neither dominating nor mask masked.

Truffle aroma

Olive oil is a fatty substance that has difficulty absorbing the aromas of a fresh truffle infused or macerated. The use of an aroma is therefore necessary to offer a product that responds to the search for an oil with the true taste of truffles.

There's no such thing as a natural truffle aroma either, and the notion of a natural aroma is in fact several natural aromas of other ingredients which, when combined, reproduce the aromas of this tubers.
